Here is a super easy vegan recipe I have for lunch quite a bit, in fact, I had it today! You could bulk it out any way, use it as a side dish or even with noodles, but it is very filling in itself. Black soy beans are such a good source of fiber they shouldn’t be overlooked at the grocery store. Black soy beans have 6 grams more fiber than green ones (edamame!).
1 cup fresh baby spinach
1 cup mushrooms of choice, chopped
1/2 cup black soy beans
1 tsp sesame oil
1/2 tsp of Bangkok Blend* or Thai seasonings
Stir fry the mushrooms in your wok with spices (I stir fry with water and use oil for flavouring ususally), then add the spinach and black soy beans. Add the sesame oil at the end when finished.
*Bangkok Blend is from Penzeys Spices. It contains: sweet peppers, garlic, ginger, black pepper, galangal, hot peppers, lemon grass, basil, cilantro.
